My Ultimate Vegan Cheese Sauce

When i became a vegan, aside from ice cream- cheese was the hardest thing for me to give up. For the last 2 years that I have been completely plant based, I hated the way vegan cheese substitutes tasted. There was always something off. Either it was bland with no flavor, it didn’t melt, or it was just packed with HORRIBLE AF INGREDIENTS! I don’t know about you, but I don’t see the point in being on a healthy diet(plant based) if you’re just going to put more junk into your body.

Any-who, it took me a while to perfect this recipe and i am finally excited to share my version. There are a lot of different recipes out there but I have a key ingredient that sets mine off from the rest! I use this vegan cheese sauce for Mac and cheese(shown), Cheddar Broccoli Rice, Baked Potato, Queso dip – the options are truly endless. You can use this cheese sauce as a base for almost any cheese based meal. Lets jump in on how I made this amazing vegan cheese sauce.

Ingredients

  • 3 medium golden potatoes
  • 1/2 cup sliced or diced carrots
  • 8 Tbs nutritional yeast
  • 1 Tbs onion powder
  • 2 Tbs garlic powder
  • 2-3 cups of water(from potatoes)
  • 2 Tbs Lemon Juice
  • 2 Tbs Tamari( SECRET INGREDIENT)

How to create this amazing sauce

  1. First boil 3 peeled golden potatoes and carrots until soft
  2. Once soft ,strain potatoes and carrots from hot water while saving the boiled water.
  3. In a blender add potatoes, carrots, nutritional yeast, onion and garlic powder, lemon juice and our secret ingredient TAMARI!!
  4. Add about 2 cups of water from boiling potatoes into your blend
  5. Blend until smooth and thick.
  6. Add more water slowly in between blends if sauce is too thick. Add the remaining water until cheese sauce is to your liking.
  7. ENJOY!!!
