Last weekend i posted a photo on my Instagram stories of my homemade salsa. On a poll, i asked if people would be interested in the recipe and the comments and requests were INSANE.
(110 yes’s, 2 no’s. To the 2 haters…I LOVE YOU)
So here is the highly requested recipe for my Homemade Mediterranean Salsa. Once you taste it, you will understand why i call it Mediterranean. I doesn’t have your standard Latin fusion/taste, but is still BANG ON! This is one of my most favorite summer snacks to make and i am always asked to bring it to cookouts aside from my vegan baked goods. (don’t worry those are soon to come)

Lets Get Choppin’
Ingredients
- 8 Roma tomatoes
- 1 large green bell pepper
- 1 medium red onion
- 3 Jalapeno’s
- 1 Lime freshly squeezed – I have also used lemon before but only half was needed.
- 1 bunch of cilantro
- ½ cup red wine vinegar
- 2 tsp of minced garlic or garlic powder
- Salt and black pepper to taste
Directions:
Using a hand chopper, chop tomatoes, green pepper, red onion and 2 jalapenos. Leave the seeds of one jalapeno. Depending on how spicy your jalapenos are; add in the last jalapeno with seeds for added spice. I like mine spicy, so I always add in 2 with seeds.
Add all chopped vegetables into a glass or metal bowl. I usually make mine in a glass bowl, but i was at my mother’s house so i used her metal bowl. I don’t know why, but it tends to help the flavors blend better than plastic bowls. Just trust me!
Next, pull out your cutting board- finely chop your cilantro and mince your garlic. Add to bowl.
Last add in red wine vinegar, lime juice, and salt/pepper. Mix well and add in more salt or pepper to your liking.
Grab your favorite bag of Tortilla Chips and DIG IN!!!!
