
When it comes to banana bread, I’m not going to lie…I was never a huge fan. Also, I hated how everyone always wanted to be extra and add chocolate chips to their breads. Well I’m allergic and so they are wrong fa dat! I saw on Pinterest that someone made a Chai loaf for Mother’s Day and I was like hmmmm…What if???
So, I took the genius idea of their Chai loaf and combined it with something used so often in vegan baking…BANANAS! Here is my new and improved Vegan and Gluten Free Chai Banana bread!

Ingredients:
Dry
- 1 ½ cups of gluten-free flour- I used this by Bob’s Red Mill
- ½ cup Unsweetened shredded coconut
- 3/4 cup coconut sugar/unrefined brown sugar
- ½ tsp cardamom powder
- 1 tsp baking soda
- ½ tsp Nutmeg
- ½ tsp Cinnamon 1/2 cup walnuts chopped

Wet
- ½ cup non-dairy milk
- ½ cup vegan butter melted or soft at room temperature
- 3 medium-sized super-ripe (on their last leg) Bananas
- 1 flax egg or egg replacer- I used ¼ cup of Just Egg

How do I make this Magical Loaf?
- Preheat oven to 350F (175C), grease your loaf pan
- In a large bowl, sift the flour. Next add the coconut & the rest of the dry ingredients
- In a blender, add in the bananas and non-dairy milk, mix until smooth. DO NOT…I repeat, DO NOT over blend.
- Pour the wet mix into the dry. Last add in your egg replacer of choice and give it a good mix.
- Pour into your banana bread tin or Muffin pan.
- Bake in the oven for 40- 50 minutes. Mine took about 1 hour in total. If you choose to make muffins, then 15-20 minutes. Test at the 40-minute mark with a toothpick.
- And BOOM! You can now smell all the divine spices and aromas lingering throughout your kitchen. You can’t wait to top it with a little bit more vegan butter or even a nice drizzle of nut butter.

BUT HOLD FAST! You must wait just a bit longer. I know you want to bite into this loaf with both hands-on deck, but we have to wait for it to completely cool. And I mean COMPLETELY! Of you wait the standard 10-15 mins…I can guarantee you, that loaf will sink like a rock in water right in front of your eyes.

Wait until the pan is completely cooled to the touch before you remove it from the pan! Honestly, this is probably the most important step…aside from placing it in the oven of course. Slice into 7 pieces and you are ALL SET! Hope you enjoy this delish Vegan and Gluten Free Chai Banana Bread. Cheers
