It has been a long time coming. I have made my legendary vegan carrot & spice layer cake for YEEEAAARS! This cake has been made on countless occasions for co workers, holiday parties, hell! its even been requested for a spring birthday cake. I have never given out my recipe before because I never dreamed i would. The only reason I am unlocking all my secrets to my cake is because I simply can not make this cake being in lock down for all my family and friends.
My vegan carrot and spice layer cake recipe is moist and mouthwatering. The aroma of spices and sweet cake fills my house giving it a homey and cozy atmosphere. I enjoy making this cake each time, just to relive and experience this feeling over and over.
My Legendary Vegan Carrot & Spice Layer Cake
Carrot Cake Recipe
Ingredients
- 1 cup shredded carrot
- 1/2 cup applesauce or 1 ripe banana mashed
- 1/4 cup oil, or additional applesauce for fat free
- 2 tsp cider vinegar
- 2 tsp pure vanilla extract
- 1 1/2 cups white, oat flour. I used Bob’s GF flour
- 1 1/2 tsp cinnamon
- 3/4 tsp salt
- 1/2 tsp baking soda
- 1/2 cup sugar
- Optional Ingredients
- 1/4 cup raisins
- Handful shredded coconut, crushed walnuts or pecans, etc
Instructions
- Preheat oven to 350 F.
- Grease and line an 9-inch round pan with parchment.
- In a mixing bowl, whisk together the first 5 ingredients and let sit at least 10 minutes or refrigerate overnight.
- Stir in all remaining ingredients.
- Pour into the pan, and smooth down.
- Bake 30 minutes or until a toothpick inserted into the cake comes out clean.
- If you can wait, I like to loosely cover once cool and let it sit overnight, because the cake tastes sweeter and is easier to cut for assembling the cake layers.

Spice Cake Recipe
Ingredients
- 2 1/2 cups all-purpose flour – Once again I used Bob’s GF flour for myself
- 1 1/4 cups brown sugar
- 1 tablespoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground cloves
- 1 1/2 teaspoons powdered ginger
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsweetened applesauce or Bobs’ Egg Replacer
- 2/3 cup baking oil of choice
- 1/2 cup unflavored and unsweetened non-dairy milk
- 2 teaspoons vanilla extract
Instructions
- Preheat the oven to 350°F and lightly oil a 9 inch Round pan.
- In a large mixing bowl, stir together the flour, brown sugar, cinnamon, ginger, nutmeg, cloves, baking powder, baking soda, and salt.
- In a separate bowl or liquid measuring cup, stir together the applesauce, milk, oil, molasses, and vanilla.
- Use a spoon to form a well in the flour mixture, then pour in the applesauce mixture.
- Stir the ingredients together just until fully combined and there are no lumps.
- Pour the batter into the baking pan and smooth out the top with a spoon.
- Place the baking pan into the oven and bake the cake for about 30 minutes, until a toothpick inserted in the center comes out clean.
- Remove the pan from the oven, transfer it to a cooling rack, and allow the cake to cool completely. Once again, over night is highly recommended.
- Prep for Assemble
Assembling the Cake
- Using a sharp knife, cake slicing tool or even my favorite (unscented floss) slice cakes into half, separating top and bottom. Now you have two layers of each cake.
- Starting with the bottom layer of the carrot cake, top layer with frosting, spreading it out and leaving about 1/4″ from the edge.
- Next add a layer of spice cake, repeat frosting instructions.
- Repeat this step one more time for the last carrot cake layer, then stick on last layer spice cake.
- Frost the top and perimeter of cake with remaining frosting. Decorate as desired. I went for some fruit and sprinkled cinnamon
