21 Day Raw Vegan Challenge- WK 2

HELL YEAH! We made it to week two of the raw challenge!!
Going into this week was hard but i am super pleased with the results from the previous week! One thing i did notice is that i woke up with more energy than before. I was not looking for my pick me up espresso shot in the morning, my stomach was not bloated like usual and the measurement changes were what really blew my mind! I mean it was only a week but still!!! It usually takes about 3 to 4 weeks to see inches come off.

Measurements

Starting Measurements
Waist= 32.6″
Stomach= 36.2″
Hips= 39.0″
Weight= 156.4 Lbs

Week 1 Measurements
Waist= 31.8″
Stomach= 34.6″
Hips= 39.0″
Weight= 151.6 Lbs

What I Ate for Week 2

Morning ACV Shot

Still throwing back on of these every morning on an empty stomach. I followed this up with a 45 min walk and a 10 min abs workout. I only did exercise every other morning. Abs ha ya girl SOOOREE!

Breakfast

Since this week i wanted to focus on my intake of vegetables, i tried to focus on having them in almost every meal. For breakfast i made a smoothie that turned out to be soooo good! You can make your smoothies anyway you want but make sure you add some sort of leafy green. Check out my vegan bowls post for instructions on how to get the best smoothie!
Here’s what was in my smoothie:

  • Strawberries
  • Blueberries
  • 1 Banana
  • Almond milk
  • 1 large handful of spinach
  • 3 tbsp hemp seeds

A.M Snack

I was loving my morning juice so much last week that i decided to make more again this week. This week i made an amazing Carrot Mango juice packed with:
-8 carrots
-5 mangos
-1 Lemon
-1 thumb of ginger
This made 5 juices!

Lunch

For lunch i tried to stick to the 50/50 plate rule. This rule helps promote weight loss and digestion all while helping you feel satiated. Half of your plate must be a starchy vegetable and half must be a non starchy vegetable. Here i have half a plate of potatoes with peppers, while the other half is steamed kale. I seasoned the potatoes so the flavors were rewarding!

P.M Snack

YOU SCREAM, I SCREAM, WE ALL SCREAM FOR NIIIICCCE CREAM!!!!

That’s right!!! I made one of my favorite vegan treats that is literally the easiest thing in the world to make. Only 2-3 ingredients and its soooo delicious. Since i cant have chocolate, i made a strawberry nice cream!
Here’s what you will need:

  • 2 Frozen bananas
  • 1/2 cup of plant based milk or water
  • 1/2 cup of fresh strawberries
  1. In a high power blender, add in frozen bananas and half (1/4 cup) of liquid. Blend in blender.
  2. Next, add in strawberries and other half of water, BLEND HER UP
  3. consistency should be extremely thick. If more water is needed, add small amounts at a time.
  4. AND VOILA!!! You made NICE Cream!

Dinner

cauliflower fried rice

For dinner this week i made a Cauliflower Fried Rice. This was so fast and easy to make and delicious! It’s a low calorie meal so if you are still hungry, you can go back for more….which i did! 🙂
Here is what you will need:

  • 2 cups of Shredded Cabbage
  • 1 bag of Riced Cauliflower
  • 1 tbsp of curry powder
  • 2 tbsp of Tamari
  • 3 small bell peppers( i used red, yellow, and orange)
  • 1/2 White onion diced
  • minced garlic
  • 1/2 bunch of cilantro to garnish (optional, but i’m obsessed with cilantro)

Night Cap

tea

After dinner, I ended the night with some tea. This week i enjoyed one of my dear favorites, Madagascar Vanilla tea! I love this tea soooo much and it has so much flavor. All i did was add a small amount of almond milk and coconut palm sugar. I was good to go!

To Wrap it up…

This Raw Challenge has definitely grown on me! It has not been easy in the slightest; and the CRAVINGS ARE REAL!!!! After seeing my results from week 1, it has definitely kept my head in the game to continue this raw challenge. If it wasn’t for that, i probably would of given up – to be honest. Looking forward to week 3 and seeing my results!

      If you have to try any, I would most def do the Vegan Nice cream! It has no added sugars and very rewarding. I used a flax milk for mine. Gave me some added protein like you would get from normal ice cream 🙂
